Chewy Spiced Cardamom and Ginger Cookies

There’s a soft dusting of snow on the ground this morning, and I’m in full-blown holiday mode. The house looks like Christmas came and vomited red, gold, and twinkle lights on just about everything, the festive tunes are playing, and the baking bonanza has begun! I take my baking pretty seriously at this time of year, because I just don’t feel that same holiday glow when there isn’t something hot and sweet being born in my oven!

I’m so excited to be sharing this beautiful Spiced Cardamom and Ginger Cookie recipe with you today! It’s a variation of one of my grandmother’s original recipes and it’s one of my absolute favourites for the holidays. Soft and chewy, fragrant and spicy, and just a little more interesting than your run-of-the-mill ginger molasses cookie. These babies are best enjoyed with a glass of ice cold milk and an inner acceptance that you’re going to eat at least five in one sitting! #noshame

Cardamom Ginger Cookies

Spiced Cardamom and Ginger Cookies:

Ingredients:

  • 3/4 cup butter
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp ginger
  • 1 tsp cardamom

Directions:

  1. Preheat oven to 350 degrees fahrenheit
  2. In mixer, cream together butter and sugar until fluffy
  3. Add in molasses and egg and beat until smooth
  4. Mix dry ingredients together and add to butter mixture
  5. Roll dough into 1-inch balls and then roll each ball in white sugar (hint: you can add a little extra cardamom and cinnamon to the rolling sugar for extra spice!)
  6. Bake at 350 degrees fahrenheit for 8 minutes or until lightly golden on the bottom
  7. Enjoy!
